Why does a muskie sometimes grab a live sucker and then drop it?

The classic muskie feeding sequence on large prey is grab-sideways, carry, then turn and swallow head-first — and the carry phase is where taste and texture get a vote. A fish that feels hard rig components, unnatural resistance from the line, or simply is not committed will eject the bait, sometimes after swimming with it for a minute. This is exactly why modern quick-strike rigs matter: hooks positioned to allow an immediate hookset during the grab phase, instead of the old "let it swallow" wait that gut-hooked and killed fish. If a fish drops the sucker, stay ready — muskie frequently return to finish what they started.
